I never thought I’d say this…

… but I was drawn to share this with you all after watching Happy Feet, last night. Orthopedic shoes are the best! If you’ve watched Grace and Frankie then you know which character I am (most likely) becoming… I’m currently OBSESSING over the wellness of my feet, and all because of one visit to (sound affect, dun dun duuuun)… Dr. Kong, the comfortable and healthy shoe company.

The reason why this was all so surprising to me was that I used to tease the shit out of one of my best friends in high school for wearing orthopedic Dr. Kong school shoes. L O L. I mean, it didn’t help that the shoes she wore were also for boys (she had big feet and my nickname for her was Twinkle Toes), but because of those specific and unaesthetically pleasing pair of Dr. Kong’s, I never thought a day would come where I would be wearing Dr. Kong shoes.

I don’t know about you, but I believe that the Universe is also a conscious being who brings forth into your life, situations, people and things that you consciously, and subconsciously attract or need in that moment. And so this is why, I believe, Dr. Kong is now in my life, hahaha.

It all started with an invite to check out their store in Robinsons Galleria. I was definitely hesitant at first, especially with my fashion background and history with the Kongs, haha 💁🏻‍♀️ but I knew that I had to have a foot-check-up because I saw that my old shoes flattened down where the arches used to be.

I was instantly inSOLD! 😆 My feet had never truly found comfort until that day! Those insoles made my feet cry with happiness. How sad I now feel to know that I have walked for 28+ years without giving a shit about my feet, and because of it, have caused a misalignment with my ankles. Something I could have prevented if I had only pushed my judgmental, teenage ego aside and listened to Rosie a.k.a Twinkle Toes.

I did mention to her that I got my very own pair of Dr. Kong’s and she was just as surprised as I… I was also surprised to see all the “hipper” styles of shoes and sandals in the store 😎. The pink sneakers caught my eye and they were super comfortable, especially worn with the insoles. I was very impressed with the overall experience; the staff were very knowledgeable and helpful, and the store was comfortable and clean.

I HIGHLY recommend visiting Dr. Kong even if it’s just for a check up, it’s free anyway! To know what’s going on down there is so important. These our very important parts of our bodies that we have been neglecting for years and years! I only wish that I was taught about the effects of flat feet and other foot problems much earlier in life, and this is why I’m taking time on this beautiful Sunday afternoon to share my story about my, now grateful, feet! 👣🙂🧡

P.S. I’m still on my orthopedic shoe journey but I want to share that I have come across life-changing arch support, vegan, and PVC-free flip-flops and sandals from Reef in Olympic Village, Ayala, Cebu. There are also other affordable brands that make arch support sandals available! Yay! I’ve also been looking online, but seriously, why are orthopedic shoes so fckin ugly!? Does anyone know of any brands that make “stylish” arch supported shoes for the flat-flooted? 🙏🏼 Write me a comment if you do! I will wifi hug you! Thank you!

Trust

Last Thursday, I chose a card from my mentor’s super pretty oracle deck which read, ‘Trust your path.’

I used to constantly question my life path and my choices and found that trusting myself was one of the hardest things to do. I realized that feeling that way put me in a stagnant cycle where I was stayed stuck and obstructed any real growth in myself and in my life. I do still struggle with trusting some of the decisions I make, but I have stopped questioning my path.

Living everyday knowing that there’s so much to learn, remember, and share gives me a reason to live, have faith, and look ahead. Whatever path you are on, trust it. There is always gain where there is trust 🙏🏼

[Telling myself this while I do tarot readings haha… practice makes perfect 😆 trust trust trust!]

PS. I started practicing tarot about a year ago with Windy at The Gassho Center in Cebu. Fell in love with how they serve guidance to everyday issues, questions or thoughts and I continue to do self-readings and (rarely) read for others as I am still learning to TRUST myself 🙏🏼♥️ For those who are interested in learning, do some research and don’t be afraid! It’s fun and they can assist you in life!

Creamy Cheezie Zucchini

My sister came over the other day and taught me how to make vegan bechamel sauce. Since then I’ve been eating a little bit too much of it, but nevertheless! This recipe will help you put down the dairy and pick up the soy!

While boiling the pasta, heat another pan on low heat and pour a cup of soy milk and a spoon of dairy-free butter (I like to use Nuttelex Original. You can buy this in Landers & SNR)

Stir till the butter has melted and slowly pour in some flour while stirring. It’s important to keep stirring or whisking so that the flour doesn’t clump! Add about half a cup of flour. If you want a thicker sauce add even more flour, and if you want it to be soupy, add less. Play with it!

When you find the right consistency for you, add chopped onions and garlic and continue to stir. Throw in the sliced zucchini and let simmer.

I like to add nutritional yeast to give it a cheezier flavor. Add about two tablespoons. If your sauce has become too thick for your liking, add a dash more soy milk and continue to stir.

You’re nearly done!

Drain your pasta, mix it in with the sauce and add salt and pepper to taste.

There it is! I hope you enjoy it as much as I do 🥒

Touchdown and fresh off the boat straight to the Louvre 🙌🏼 It was a perfect summer’s day.

You can’t guess where we went to next… one of the first vegan restaurants in Paris, Le Grenier De Notre Dame 😻🌱 The dishes were not only colorful, they were very tasty and flavorful, and of course, nutritious!

And then of course some sorbet for the lady. Don’t be fooled, it was delicious.

To Musée Picasso!

Beautiful work and beautiful quotes by Picasso himself cover the rooms in Hôtel Salé. What a great museum to visit.


Palace of Versailles

The gardens were amazing! There’s a lot to see so make sure you wear comfortable shoes!

So much history on these walls. Truly a magnificent palace, full of intricate gold details. Being surrounded by such beauty and history really makes you recognize the evolution of design and appreciate where it came from.

I could spend hours, even a day or two at some of Paris’s famous sites, but unfortunately we didn’t have much time left to spend. Our last night in Paris…

Yes, we returned to Le Grenier De Notre Dame for our last supper 🤗 🌱

Then I took Mike to see the famous Avant-Garde cabaret show in Paris…. Crazy Horse! It was so much fun and very very creative show. The performances were colorful, edgy, sexy and very elegant. I highly recommend it!

If you haven’t been, take some time away from General Luna and head up to the Magpupungko rock pools. Its amazing there! Make sure to check the tides so you know when its the best time to go.

After an afternoon there, we found this little guy… so we took him home! Name: Pungko ♥️

My boyfriend’s family have a beautiful place in Pilar, a town located in the middle of Siargao Island. Quiet and right on the water, this is a destination fit for friends and family. Rooms will be available for rent very soon! This is the view from the deck.

After basking in the sun and enjoying the quiet, we went to Lotus Shores in General Luna. If you’re ever in Siargao, you have to try out this restaurant. They are well known for their delicious vegan menu 🌱👌🏼  and everything was superb.

Meet the beautiful rescue, Roo ♡

She was run over about a year ago at only 4 months and has undergone 3 surgeries for her 2 front legs.
Roo is a sweet and fun loving doggie who loves to play, however she tires easily as she has to slouch and walk on her hind legs. This causes a lot of strain on Roo’s spine.

PLEASE help Nena Hernandez, Island Rescue Organization & I raise money so that she can get prosthetic legs made as soon as possible .
It will cost approximately $1000 (we’re waiting for actual cost) and I will keep you posted on the progress.

Vegan Veggie Noodles

Vegan Veggie Noodles

Simple and light, perfect for dinner.

– Boil 1 teaspoon of sesame oil with 3 cups of vegetable broth (I used one from Healthy Options)

– Add 1 onion, 3 cloves of garlic, 1/3 a large carrot, and a handful of broccoli

– If you’d like, add soy meat/tofu to the mixture and let cook

– After 3 minutes, add the noodles of your choice (I used a mixture of rice & glass noodles) and cook for another 2 minutes

– Add a tablespoon of liquid aminos or vegan soy sauce and 1 teaspoon of chilli flakes

– Squeeze in some lemon and it’s ready for you to eat!

Vegan Banana Bread with Coconut Sugar Glaze

Preheat oven to 350 degrees celsius & mix all ingredients together in a food processor:

– 3 ripe medium sized bananas

– 1 1/2 cup of peanut butter

– 1/2 cup of almonds

– 1 cup of oats

– 2 tablespoons of coconut flour/flour of your choice

– 1/4 teaspoon of baking soda

– 1 teaspoon on vanilla extract

– 1/4 cup of maple syrup

– 1/4 teaspoon of sea salt

– 1/4 cup of almond milk

(Make sure the mixture is not runny. Add more oats till you get a thicker mixture.)

Put mixture into an oven-safe dish and bake at 350 degrees celsius for 15-20 minutes.

Remove from oven and let sit for 10 minutes.

Coconut Sugar Glaze:

– 1/2 cup of coconut sugar

– 1 tablespoon of virgin coconut oil

– 2 tablespoons of unsweetened almond milk

Mix ingredients together with an electric hand mixer and then pour and spread glaze on top.

I sprinkled some cinnamon on top of my cake :]

We worked up our appetites… The Naam is a 24 hour Vegan/Vegetarian Restaurant in Vancouver.

Michael had the Tempeh Reuben; marinated tempeh with melted cheese, grilled mushrooms, mustard, sauerkraut & grated beets, on a whole wheat burger bun.

I ordered the Asian Noodle Bowl; rice noodles, bean sprouts, broccoli, red pepper, shiitake mushrooms, deep fried tofu and vegan tempeh strips, in miso broth.

Our meal was good, but I would have to say that Mike ordered the tastier dish. The noodle bowl was full of vegetables and tempeh but I wish the miso soup had more flavour. Over all it was a good and healthy meal! I now know where to go when Im hungry at 3AM in the morning in Vancouver!

Im back! Canada was so beautiful, and the food was insanely delicious! I was able to hit up some great Vegan/Vegetarian restaurants while I was there, and while road tripping to Calgary from Vancouver, we stopped over a beautiful town called, Banff.

Nourish Bistro was the first international Vegan/Vegetarian I tried since turning vegan, so you can imagine what I was like reading ALL the options I had to choose from! (I was drooling much more than a kid in a candy store)…

The BEST dish we ordered, the Mac & Squeeze; qnocchi in a creamy coconut and smoked paprika sauce.It seriously tasted better than any mac & cheese I’ve ever had. I need to try and make this!

Nourish Bistro was so delicious, it had NO MEAT in the menu and there were vegan, vegetarian, and gluten-free options. I wish I was able to try all the dishes!

They say that theres a reason why you take your kids to pick apples but don’t take them to a slaughter house, and Dana Ellyn’s paintings says it all-

What you don’t see or hear doesn’t exist, but the sorry truth is that it DOES. Every single day, thousands and thousands of animals are kept in confined spaces, are mistreated, and then slaughtered just to satisfy people’s taste buds for 10 minutes. And because no one actually sees this happening, how could it matter to them?

It all started when we were kids. Most of us ate whatever was put on our plates without question and without even being told where it came from. Advertisements on television showed hotdogs filled with cheese, burgers and spaghetti meat balls. Parents told us we had to drink lots of milk so we could grow big and strong, but no one taught us the process from animal to mouth, and why would they? Why teach anyone, especially kids about the harm caused to these animals? If they were educated about it, they probably wouldn’t eat it and that couldn’t happen because what else would they eat? “Its takes too much trouble to be a vegan/vegetarian”– and this is only because we, too were not educated on this type of diet.

In my opinion, just because eating meat is human tradition, habit and some say, a key to survival, it doesn’t mean we shouldn’t teach children how their food is made. We all knew chicken came from a chicken, pork came from a pig, and beef came from a cow, but we didn’t know what goes behind the process of animal farming, and some of us still don’t know. When we were kids, most of us loved animals and still do, so when was it okay for us to think that it was right to kill and eat them? When was is okay to eat a pig but not a dog? How did we learn to eat the way we do?

I wish I questioned what was on my plate. I wish I was taught about the horrors of the meat industry, even at a young age. I think it is important to know and to share to our children about what is going into their bodies, and of course, what happens to these helpless animals when they’re kept in factories. These days, most to all inorganic meat produce contains antibiotics, unnatural flavour enhancers and other toxic chemicals. Educating yourself about the food you eat is by far the most important thing I think anyone should strive to do.

What you’re putting into your body is what makes you. You digest it, whether it’s healthy or harmful for you.

A girlfriend shared this video to me yesterday; short but very informative video for those who question, why is cow’s milk is included in our diet? Here is the answer.

This did not come shocking to me. Luckily, when I was a child, my parents never forced milk on me. Sure, it tasted great with my cereal, but I was never one who drank glasses and glasses of milk. To me, it was unappetising and I just didn’t understand the whole hype of it. Growing up living in the countryside of England, I was exposed to milk farming, and I just wasn’t drawn to the idea that the milk came from another animal’s “breast”. Of course I was told that it would make my bones stronger and help me grow, but when you’re a kid, non of that really makes you want to eat or drink certain things.

Evidence of humans milking cows dates back to 4000 BC. It was part of a lot of civilisations, including the ancient Sumerians and Egyptians, however, how we milk cows today is disheartening. These industries only care about money, they don’t care about our health, and they sure don’t care about living animals.

Here is a video that explains why how dairy is produced. This is the reality.

Contrary to popular belief, ignorance is NOT bliss.

  • Dairy cows are kept almost continually pregnant in order to maximize their production of milk. Calves are separated from their mothers within 12 – 24 hours of birth and most are trucked to slaughter from just 5 days old. Around 700,000 ‘bobby calves’ (mostly males) are killed every year as waste products of the dairy industry, and others are made into veal. These young, vulnerable animals can legally be deprived of food for up to 30 hours during this journey to slaughter.
  • Mother cows are milked twice a day and the use of machine pumps can contribute to painful mastitis. Before long, she is artificially impregnated again, carrying another calf to term, only for the same cruel cycle to be repeated.
  • Cows can expect to live up to 20 years. Dairy cows used in the milk industry though are regarded as ‘spent’ after just 6 or 7 years and are sent to slaughter – their years of pain and sacrifice not sparing them this premature end.

Fortunately, many tasty and healthy plant-based ‘milks’ are now available on the market or can be made in the comfort of your own home. From hemp and coconut to almond and soy, plant-based, creamy beverages can fill the dairy ‘void’ in your home and help you live a longer, healthier life. My favourite place to buy these beverages are in S&R.

I hope this has opened your eyes to the cruel, cruel world of the dairy industry. Make the right choice and stop the violence.

Vegan & Gluten-Free Waffles

Vegan & Gluten-Free Waffles

People think going vegan means you miss out on all the goodies, but that’s not true! Taste and texture can be different, but it’s about feeling good about what you’re putting into your body and that what you’re eating is cruelty free.

Luckily, healthier grocery items are becoming more available in Cebu city. S&R is a great place to shop for healthy items, as well as Healthy Options and Rustan’s.

(You can use any brand of these items)

Ingredients from S&R:

Natura- Almond Milk Vanilla

Cloud 9- Gluten-Free Pancake & Waffle Mix

Coconut oil

from Healthy Options:

The Chia Co- White Chia Seeds

Directions:

Soak one cup of chia seeds into one cup of water for 10 minutes

Put 1 1/2 cups of  the gluten-free waffle mix into a big bowl

Add 1 1/4 of almond or any non-dairy milk and mix

Mix in the chia seeds with 2 table spoons of coconut oil

If you’re making pancakes, heat up the pan and pour in the size you want. Flip after about 1-2 minutes.

If you’re using a waffle maker, pour in and remove after 2-3 minutes, depending on  your waffle maker.

Serve and eat with your favourite toppings. I chose Agave syrup (from S&R), Hershey’s Chocolate Syrup (yes, it’s vegan!), and Cashew Butter- Vanilla Chia (from The Echo Store).
